Small in size, big in flavour! The Mbilima washing station in Rwanda knows exactly what goes into making a quality coffee. They start with their cooperative, where 720 smallholder farmers in the Northern Province pour their best cherries into the station. From there, a Pinhalense machine affectionately coined Umupolisi (police person) combs through the cherries and sorts according to weight before they are pulped, washed and dried on African beds. This particular mico-lot consists of peaberries (whole coffee beans), influencing the sparkling acidity, juicy fruit, and floral aroma of the final cup.
